| Background
During the past 150 years, three major changes have been introduced into
the eating habits of most people. These changes are
- Refined sugar
- Refined fats and oils, and
- Refined grains and cereals
Refined Sugar
Sugar cane and sugar beet have provided the world with vast amounts of
sugar. The juice from these plants contains sucrose, which
is boiled into molasses or syrup and then purified. The white crystalline
sparkling sugar granules thus obtained contain none of the vitamins,
minerals, protein, fat and fiber which were originally present in the
cane or beet.
Refined Fats and Oils
During the industrial production of oils from seeds or fruits, oil is extracted
by breaking the seed through milling, and isolating the fatty portion (oil)
from the other components of the seed or fruit. The refining process is accomplished
with the use of solvents, eliminating "industrial impurities" such
as carbohydrate, proteins, resins and phospho-lipids (Lecithin) from the oil,
leaving basically
triglycerides - pure fat. The "industrial impurities" which are eliminated,
contain the oil's medicinal properties.
Refined Fats - Butter and Margarine
Margarine is an emulsion of fat and water, solid at room temperature, and is
derived primarily from vegetable oils or animal fats such as slaughterhouse
waste or fish oils. There is ongoing debate among scientists as to whether
or not margarine is preferable to dairy butter. Each has its advantages and
disadvantages, but neither of these two foods is appropriate for a healthy
diet.
Refined Grains and Cereals
Modern technology has made it possible to remove the germ and bran from wheat
and corn, and also to polish rice. This refining process also removes the vitamins,
minerals, protein, fat and fiber from these grains.

fats and refined grains,
